Homemade Zero Sugar Chocolate (it’s true)

Chocolate and sweets were big favorites for everyone in my family when I was a kid. Grandma always had a full candy jar and sleepovers at her house meant we’d get to stay up for “late night” which was the tradition of eating Bounty Bars and Milk Duds while watching TV way past our bedtime. The ultimate in spoiling us! I suspect some version of ‘late night’ goes on while my kids have sleepovers at my mom’s house nowadays but they’re smarter than to tell me!

Whenever I’d go trick or treating on Halloween as a kid I’d always be out to find the Almond Joys.

These Chocolate Almond Coconut Delights are my healthful version of the Almond Joy. Store-bought chocolate tastes so sweet to me now that I don’t even enjoy it anymore. I love the strong chocolate flavor of these chocolate treats and it’s great to be able to control just how much sweetness is added into them.

Makes about 12 treats

6 tablespoons coconut oil

6 tablespoons cacao powder

3 tablespoons monk fruit

2-3 tablespoons chopped almonds or cashews (optional)

2-3 tablespoons unsweetened shredded coconut

1. Melt coconut oil over lowest flame in saucepan.

2. Remove from heat and add cacao powder and agave. Stir until smooth.

3. Add coconut and chopped nuts as desired.

4. Spoon into muffin paper liners in a muffin pan and place in the freezer until ready to enjoy! (Can also be made as a bark by pouring it into a plastic container.)

Note: All above ingredients can be bought raw for those following a raw food diet.
