Keto Chocolate Lava Mug Cake

An ooey gooey chocolate keto Lava Mug Cake that can be made in minutes – GF, DF,
sugar-free and with lots of protein and good fats!

We live once! (Or, who really knows, but…) It’s this kind of a morning over here,
anyway!!!

Ingredients
4 eggs, beaten
½ c coconut oil, melted
½ c almond milk, unsweetened
½ c tiger nut flour
½ c almond flour
½ cup cocoa powder
¼ cup monk fruit
1 t baking soda
½ t salt
Optional: ½ cup shredded coconut, ¼ cup dark chocolate chunks (85% dark)

Instructions

1. Melt coconut oil in microwave-safe ramekin for 30 seconds.
2. Whisk in baking soda, salt, and monkfruit very well with a fork.
3. Whisk in egg to emulsify everything.
4. Whisk in flour and cocoa until lumps are mostly gone and mixture is smooth,
shiny, and velvety
5. Mix in shredded coconut and chocolate chunks..
6. Divide mixture into 4-6 ramekins
7. Cook in center of microwave for 30-60 seconds
8. Overcooking will cook all of the “lava” that forms under and around the edges
of the cake….so be sure to under-cook it first and test to see if it’s gooey.
